3 medium sweet potatoes, cooked whole in skins
½-cup apple juice
¼-cup crushed pineapple
¼-cup raisins, soaked in apple juice
2 eggs, beaten
Peel, chop and mash sweet potatoes. Add syrup and crushed pineapple; mix well. Heat apple juice, raisins and spices in microwave; cool and add to sweet potato mixture. Beat eggs and add to sweet potato mixture; mix well. Pour into casserole dish. Cook covered in microwave on medium heat for 10 minutes or in conventional oven at 325 degrees for 30 minutes or until firm.
